Æbleflæsk (apple-pork)

Æbleflæsk is a traditional Danish dish that combines the sweetness of apples with the savory flavors of pork. It is a simple yet delicious recipe that can be enjoyed as a main course or a side dish.

Here is a detailed recipe to help you recreate this classic

  • - 500g pork belly, thinly sliced

  •  2-3 medium-sized apples (preferably tart varieties like Granny Smith or Cox's Orange Pippin)

  •  1 tablespoon butter

  •  1 tablespoon sugar

  • 1 teaspoon lemon juice

  • Salt and pepper to taste

1. Begin by preparing the pork belly. Remove any excess fat and slice it into thin strips. It is crucial to have thin slices to ensure proper cooking and crispy texture.

2. Heat a large frying pan or skillet over medium heat and add the pork belly slices. Cook them until they become crispy and golden brown on both sides. This usually takes around 8-10 minutes. Make sure to flip them occasionally to ensure even cooking.

3. While the pork is cooking, peel and core the apples. Cut them into thin slices or small cubes, depending on your preference.

4. In a separate pan, melt the butter over medium heat. Add the apple slices, sugar, and lemon juice. Sauté the apples until they soften slightly and caramelize, usually for about 5-7 minutes. Stir occasionally to prevent them from sticking to the pan.

5. Once the apples are cooked, remove them from the heat and set them aside.

6. By now, the pork belly should be crispy and ready. Remove it from the heat and transfer it to a plate lined with kitchen paper towels. This helps absorb any excess oil and keeps the pork crispy.

7. Assemble the dish by placing a layer of crispy pork belly on a serving platter. Top it with a generous amount of sautéed apples. Repeat this layering process until all the pork and apples are used.

8. Season the dish with salt and pepper to taste. The sweetness of the apples and the saltiness of the pork should create a harmonious balance of flavors.

9. Æbleflæsk is traditionally served warm or at room temperature. You can enjoy it as a main course, accompanied by rye bread or Danish rugbrød. It can also be served as a side dish alongside other Danish
