Instructions:


1. In a large pot, cook the diced bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set aside, leaving the bacon grease in the pot.



2. Add the diced onion, celery, and carrots to the pot and sauté until softened, about 5 minutes. Add the minced garlic and cook for an additional minute.



3. Stir in the butter until melted, then sprinkle the flour over the vegetables and stir to combine. Cook for 2-3 minutes to cook out the raw flour taste.



4. Slowly pour in the chicken or vegetable broth while stirring constantly to prevent lumps from forming. Add the bay leaves and thyme, then bring the mixture to a simmer.



5. Add the cleaned clams to the pot and cover with a lid. Cook for 5-10 minutes, or until the clams have opened. Discard any clams that do not open.



6. Remove the clams from the pot and set aside to cool slightly. Once cool enough to handle, remove the clams from their shells and chop them into bite-sized pieces, discarding any shells and any clams that are not fully cooked.



7. Return the chopped clams to the pot, along with the heavy cream. Stir to combine and season with salt and pepper to taste.



8. Let the chowder simmer for an additional 5-10 minutes to allow the flavors to meld together. Taste and adjust seasoning as needed.



9. Serve the clam chowder hot, garnished with the crispy bacon and chopped fresh parsley. Enjoy this comforting and delicious soup with crusty bread or oyster crackers on the side.
