-2 lbs (900) chicken thighs, bone and skin-on cut into serving pieces

- 1 green bell pepper, cut into strips

- 1 medium carrot, peeled and sliced into rounds

- 1 cup potatoes, peeled and cubed

- 1 cup tomato sauce

- 2 tablespoons tomato paste

- 1 cup water

- 1 cup liver spread (alternatively, you can use liver pâté)

- 1 cup green olives, pitted

- 1 cup red or green chili peppers (optional, for added spice)

- 1 cup grated cheese (cheddar or quick-melting cheese)

- Salt and pepper, to taste


Step 1: Preparing the Chicken

1. Season the chicken pieces with salt and pepper, ensuring that they are evenly coated.

2. In a large pot or Dutch oven, heat the cooking oil over medium-high heat.

3. Add the chicken pieces and sear them until they turn golden brown on all sides. This process helps seal in the juices and adds flavor to the dish.
