Ingredients:

  1. - 1 lb of firm white fish fillets, such as cod or halibut

  2. - 1 onion, thinly sliced

  3. - 2 cloves of garlic, minced

  4. - 1 red bell pepper, sliced

  5. - 1 yellow bell pepper, sliced

  6. - 1 green bell pepper, sliced

  7. - 1 tomato, diced

  8. - 1 can of coconut milk

  9. - 1 cup of fish or vegetable broth

  10. - 1/4 cup of chopped cilantro

  11. - 1/4 cup of chopped green onions

  12. - 2 tablespoons of olive oil

  13. - 1 tablespoon of palm oil (optional)

  14. - 1 tablespoon of lime juice

  15. - 1 tablespoon of paprika

  16. - 1 tablespoon of cumin

  17. - Salt and pepper to taste

Instructions:

1. Cut the fish fillets into large chunks and season with salt, pepper, lime juice, paprika, and cumin. Let the fish marinate for at least 30 minutes in the refrigerator.

2. In a large, deep skillet or Dutch oven, heat the olive oil over medium heat. Add the sliced onions and garlic, and sauté until the onions are translucent and fragrant.

3. Add the bell peppers to the skillet and cook for a few minutes until they start to soften.

4. Stir in the diced tomatoes and cook for another 2-3 minutes, allowing the flavors to meld together.

5. Pour in the coconut milk and fish or vegetable broth, stirring well to combine. Bring the mixture to a simmer.

6. Carefully add the marinated fish chunks to the skillet, making sure they are submerged in the liquid.

7. Cover the skillet and let the stew simmer gently for about 15-20 minutes, or until the fish is cooked through and flakes easily with a fork.

8. If using palm oil, drizzle it over the stew and stir gently to incorporate.

9. Taste the stew and adjust the seasoning as needed with salt and pepper.

10. Just before serving, sprinkle the chopped cilantro and green onions over the top of the stew for a fresh and vibrant finish.

11. Serve the Moqueca de Peixe hot, accompanied by steamed rice or crusty bread to soak up the delicious broth.

Enjoy this flavorful and comforting Brazilian dish with friends and family, and let the exotic tastes transport you to the sunny shores of Brazil. Bon appétit!
