  • - 2 sprigs fresh thyme

  • - 1 bay leaf

  • - Zest of 1 lemon

  • - Gremolata, for garnish (optional)


Instructions:

1. Preheat the oven to 350°F.


2. Season the veal shanks with salt and pepper, then dredge them in flour, shaking off any excess.



3. In a large Dutch oven or braising pan, heat the olive oil over medium-high heat. Brown the veal shanks on all sides, about 3-4 minutes per side. Remove the shanks from the pan and set aside.


4. In the same pan, add the onion, carrots, and celery. Cook until softened, about 5 minutes. Add the garlic and cook for another minute.



5. Pour in the white wine and deglaze the pan, scraping up any browned bits from the bottom. Allow the wine to reduce by half.


6. Add the diced tomatoes, broth, rosemary, thyme, bay leaf, and lemon zest to the pan. Bring the mixture to a simmer.



7. Return the veal shanks to the pan, nestling them into the sauce. Cover the pan and transfer it to the preheated oven.


8. Braise the veal shanks in the oven for 2-2 1/2 hours, or until the meat is tender and falling off the bone.



9. Remove the pan from the oven and discard the herb sprigs and bay leaf. Taste the sauce and adjust the seasoning with salt and pepper, if needed.


10. Serve the Osso Buco hot, garnished with gremolata if desired. Enjoy this delicious dish with creamy polenta, risotto, or crusty bread to soak up the savory sauce.
