Ingredients:


  1. - 1 cup sugar

  2. - 1/2 cup unsalted butter, melted

  3. - 1 cup sweetened shredded coconut

  4. - 1/2 cup coconut milk

  5. - 4 large egg yolks

  6. - 1/2 cup fresh lime juice

  7. - 1 teaspoon vanilla extract

  8. - Pinch of salt


Instructions:


1. Preheat your oven to 350°F (180°C) and grease a 9-inch round baking dish with butter.


2. In a medium bowl, combine the sugar and melted butter. Mix well until the sugar is dissolved.


3. Add the shredded coconut and coconut milk to the sugar mixture and stir until well combined.


4. In a separate bowl, whisk together the egg yolks, lime juice, vanilla extract, and salt until smooth.


5. Slowly pour the egg yolk mixture into the coconut mixture, stirring constantly to ensure everything is well incorporated.


6. Pour the quindim mixture into the prepared baking dish and smooth the top with a spatula.


7. Place the baking dish in a larger baking pan and fill the larger pan with hot water until it reaches halfway up the sides of the quindim dish. This water bath will help the quindim cook evenly and prevent it from curdling.


8. Bake the quindim for about 45-50 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.


9. Remove the quindim from the oven and let it cool completely before refrigerating for at least 2 hours.


10. Once chilled, run a knife around the edges of the quindim to loosen it from the dish. Place a plate on top of the dish and invert the quindim onto the plate.


11. Serve the quindim chilled or at room temperature, garnished with fresh berries or a sprinkle of powdered sugar.
