Authentic Chili con Carne

2 pounds (900g) beef chuck, cut into bite-sized cubes

- 2 tablespoons vegetable oil

- 1 large onion, finely chopped

- 3 cloves of garlic, minced

- 2 jalapeno peppers, finely chopped (adjust according to desired heat level)

- 2 teaspoons ground cumin

- 2 teaspoons chili powder

- 1 teaspoon dried oregano

- 1 teaspoon paprika

- 1/2 teaspoon cayenne pepper (optional, for extra heat)

- 1 can (14 ounces/400g) diced tomatoes

- 1 can (14 ounces/400g) kidney beans, drained and rinsed

- 1 cup beef broth

- Salt and pepper to taste

- Fresh cilantro/green onion, chopped (for garnish)

1. Heat the vegetable oil in a large, heavy-bottomed pot or Dutch oven over medium-high heat.

2. Add the beef cubes to the pot and cook until browned on all sides. This will help develop a deep flavor in the chili. Remove the beef from the pot and set it aside.

3. In the same pot, add the chopped onion, minced garlic, and jalapeno peppers. Sauté until the onions become translucent and fragrant, about 5 minutes.

4. Add the ground cumin, chili powder, dried oregano, paprika, and cayenne pepper (if using) to the pot. Stir well to coat the onions and peppers with the spices. Cook for another minute to release the flavors.

5. Return the browned beef cubes to the pot and mix them with the onion and spice mixture.

6. Pour in the diced tomatoes, kidney beans, and beef broth. Stir everything together, making sure to scrape any bits stuck to the bottom of the pot.

7. Bring the chili to a boil, then reduce the heat to low and cover the pot. Allow it to simmer gently for at least 1.5 to 2 hours. This slow cooking process will tenderize the beef and allow the flavors to meld together.

8. Taste the chili and season with salt and pepper according to your preference. Adjust the heat level by adding more chili powder or cayenne pepper if desired.

9. After the chili has simmered to perfection, remove it from the heat and let it sit for a few minutes. This will allow the flavors to further develop.

10. Serve the chili con carne hot, garnished with fresh cilantro. It pairs exceptionally well with cornbread, rice, or tortilla chips.

Congratulations on preparing a delightful batch of authentic Chili con Carne! The combination of tender beef, aromatic spices, and robust flavors in this Tex-Mex dish is sure to impress friends and family alike. Enjoy the hearty goodness
