  6. - 4 cups of stale bread, torn into small pieces

  7. - 1 onion, chopped

  8. - 4 cloves of garlic, minced

  9. - 2 tablespoons of dendê oil (palm oil)

  10. - 2 tablespoons of olive oil

  11. - 2 tablespoons of ground coriander

  12. - 2 tablespoons of ground cumin

  13. - 1 tablespoon of ground turmeric

  14. - 1 teaspoon of ground ginger

  15. - Salt and pepper to taste

  16. - Fresh cilantro, chopped, for garnish


Here is a step-by-step guide to making Vatapá:


1. In a bowl, soak the dried shrimp in warm water for about 30 minutes to rehydrate them. Drain and set aside.


2. In a food processor, pulse the peanuts, cashews, and shredded coconut until finely ground. Add the coconut milk and blend until smooth. Set aside.


3. In a large pot, heat the dendê oil and olive oil over medium heat. Add the chopped onion and minced garlic and sauté until translucent.


4. Add the ground coriander, cumin, turmeric, and ginger to the pot and stir to combine. Cook for a few minutes until fragrant.


5. Add the rehydrated shrimp to the pot and cook for another 2-3 minutes.


6. Add the bread pieces to the pot and stir to combine. Cook for a few minutes until the bread starts to break down.


7. Pour in the nut and coconut milk mixture and stir well to combine. Season with salt and pepper to taste.


8. Cook the mixture over low heat, stirring occasionally, for about 20-30 minutes, or until it thickens to a creamy consistency.


9. Serve the Vatapá hot, garnished with fresh chopped cilantro. Enjoy with rice, farofa, or acarajé.
