Beef stew with paprika

Goulash is a classic Hungarian dish that features tender chunks of beef cooked in a flavorful paprika-infused broth. This hearty stew is the perfect comfort food for a cold winter's day. Here is a detailed recipe for making goulash:

Ingredients:
- 2 lbs beef chuck, cut into 1-inch cubes
- 2 tbsp vegetable oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 2 tbsp sweet paprika
- 1 tbsp smoked paprika
- 1 tsp caraway seeds
- 2 cups beef broth
- 1 cup crushed tomatoes
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- Salt and pepper, to taste
- Chopped fresh parsley, for garnish
Instructions:
1. In a large Dutch oven or heavy-bottomed pot, heat the vegetable oil over medium-high heat. Add the beef cubes in batches and brown them on all sides. Remove the beef from the pot and set aside.
2. In the same pot, add the chopped onion and garlic. Cook until the onion is soft and translucent, about 5 minutes.
3. Stir in the sweet paprika, smoked paprika, and caraway seeds. Cook for another 2 minutes, stirring constantly to toast the spices.
4. Return the browned beef to the pot and add the beef broth and crushed tomatoes. Bring the mixture to a boil, then reduce the heat to low and cover the pot. Simmer for 1.5-2 hours, or until the beef is tender.
5. Add the chopped bell peppers to the pot and continue to simmer for another 30 minutes, or until the peppers are softened.
6. Season the goulash with salt and pepper to taste. Serve hot, garnished with chopped fresh parsley.
