Instructions:

1. Season the veal cutlets with salt and pepper on both sides.


2. Set up a breading station with three shallow dishes. Place the flour in one dish, the beaten eggs in another dish, and the breadcrumbs in the third dish.


3. Dredge each veal cutlet in the flour, shaking off any excess. Dip the cutlet into the beaten eggs, making sure it is fully coated. Finally, coat the cutlet in the breadcrumbs, pressing gently to adhere.


4. Heat a large skillet over medium-high heat and add enough vegetable oil to coat the bottom of the pan.


5. Once the oil is hot, carefully add the breaded veal cutlets to the skillet. Fry the cutlets for 2-3 minutes on each side, or until they are golden brown and cooked through.


6. While the veal is frying, prepare the salad. In a large bowl, combine the lettuce, cucumber, and red onion.

8. Drizzle the dressing over the salad and toss to combine.


9. Once the veal cutlets are cooked, transfer them to a paper towel-lined plate to drain any excess oil.
