Ingredients:

  1. - 2 lbs beef shanks, cut into pieces

  2. - 1 large onion, chopped

  3. - 4 cloves garlic, minced

  4. - 2-3 stalks of lemongrass, smashed

  5. - 2-3 pieces of corn on the cob, cut into thirds

  6. - 2-3 pieces of taro root, peeled and cut into chunks

  7. - 2-3 pieces of banana heart, sliced

  8. - 1-2 pieces of plantain, sliced

  9. - 1 small cabbage, quartered

  10. - Fish sauce, to taste

  11. - Salt and pepper, to taste

  12. - Water



Instructions:


1. In a large pot, add the beef shanks and enough water to cover the meat. Bring to a boil and then reduce heat to a simmer. Skim off any foam that rises to the top.



2. Add the chopped onion, minced garlic, and smashed lemongrass to the pot. Simmer for about 2-3 hours or until the beef shanks are tender.



3. Once the beef shanks are tender, add the corn on the cob, taro root, banana heart, and plantain to the pot. Simmer for another 20-30 minutes or until the vegetables are cooked through.



4. Season the soup with fish sauce, salt, and pepper to taste. Adjust the seasoning as needed.


5. Finally, add the cabbage to the pot and simmer for another 5-10 minutes or until the cabbage is tender.



6. Serve the Bulalo hot in bowls, making sure to include a generous portion of beef shanks, vegetables, and broth in each serving.



7. Enjoy your homemade Bulalo with steamed rice and a side of fish sauce with calamansi or chili for dipping.
