This Erdäpfelsalat is a refreshing and flavorful side dish that pairs well with grilled meats or as a standalone dish. The combination of fresh herbs and tangy dressing adds a burst of freshness to the creamy potatoes.

Ingredients:
  1. - 2 pounds of Yukon Gold potatoes

  2. - 1/4 cup of chopped fresh parsley

  3. - 2 tablespoons of chopped fresh chives

  4. - 1/4 cup of chopped fresh dill

  5. - 1/4 cup of chopped fresh tarragon

  6. - 1/2 cup of mayonnaise

  7. - 1/4 cup of Dijon mustard

  8. - 1/4 cup of white wine vinegar

  9. - Salt and pepper to taste


Instructions:

1. Start by washing and scrubbing the potatoes under cold water to remove any dirt. Place them in a large pot and cover with cold water. Add a pinch of salt to the water and bring it to a boil over high heat.



2. Reduce the heat to medium and let the potatoes simmer for about 15-20 minutes, or until they are tender when pierced with a fork. Be careful not to overcook the potatoes as they will become mushy in the salad.



3. While the potatoes are cooking, prepare the dressing by combining the mayonnaise, Dijon mustard, white wine vinegar, and salt and pepper in a small bowl. Mix well to combine.



4. Once the potatoes are cooked, drain them in a colander and let them cool slightly. Once they are cool enough to handle, cut them into bite-sized cubes and place them in a large mixing bowl.



5. Add the chopped herbs to the potatoes and gently toss to combine. Pour the dressing over the potatoes and herbs and mix well to ensure everything is evenly coated.



6. Taste the salad and adjust the seasoning with more salt and pepper if needed. You can also add more herbs if you prefer a stronger herb flavor.



7. Cover the salad with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld together.

8. Before serving, give the salad a final toss to ensure everything is well mixed. Garnish with a few extra sprigs of fresh herbs for a decorative touch.



9. Serve the Erdäpfelsalat as a side dish at your next barbecue or picnic, or enjoy it on its own as a light and refreshing meal. Enjoy!
