Kare-Kare Recipe

Ingredients:
- 2 lbs oxtail, cut into 2-inch pieces
- 1 lb beef tripe, cleaned and cut into strips
- 2 tbsp cooking oil
- 1 large onion, chopped
- 4 cloves garlic, minced
- 1 cup peanut butter
- 4 cups beef broth
- 1 cup water
- 1 eggplant, sliced
- 1 bunch long beans (sitaw), cut into 2-inch pieces
- 1 bunch bok choy, chopped
- Salt and pepper to taste
- Shrimp paste (bagoong) for serving
Instructions:
1. In a large pot, heat the cooking oil over medium heat. Add the oxtail and beef tripe and cook until browned on all sides.
2. Add the chopped onion and minced garlic to the pot and sauté until fragrant.
3. Pour in the beef broth and water, and bring to a boil. Reduce heat to low, cover, and simmer for about 2-3 hours or until the meat is tender.
4. In a separate pan, heat a little oil and sauté the eggplant, long beans, and bok choy until slightly tender. Set aside.
5. Once the meat is tender, add the peanut butter to the pot and stir until well combined. Simmer for another 10-15 minutes, stirring occasionally.
6. Season the Kare-Kare with salt and pepper to taste.
7. Add the sautéed vegetables to the pot and stir gently to combine.
8. Serve the Kare-Kare hot with a side of shrimp paste.
