Mac and cheese, short for macaroni and cheese, is a classic American comfort food dish made with cooked macaroni pasta and a creamy cheese sauce. Mac and cheese can be made with a variety of cheeses, such as cheddar, mozzarella, or Gruyere, and can be customized with additions like bacon, breadcrumbs, or vegetables. It is a simple yet satisfying dish that is perfect for any occasion.

Ingredients:
- 1 pound pasta (such as elbow macaroni or shells)
- 4 tablespoons unsalted butter
- 1/4 cup all-purpose flour
- 2 cups whole milk
- 2 cups shredded cheese (such as cheddar or a blend of cheeses)
- Salt and pepper to taste
- Optional toppings: breadcrumbs, bacon bits, chopped herbs
Instructions:
1. Cook the pasta according to package instructions until al dente. Drain and set aside.
2. In a large saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes until it forms a paste.
3. Slowly pour in the milk, whisking constantly to prevent lumps from forming. Cook the mixture for 5-7 minutes until it thickens and coats the back of a spoon.
4. Remove the saucepan from heat and stir in the shredded cheese until melted and smooth. Season with salt and pepper to taste.
5. Add the cooked pasta to the cheese sauce and stir until well coated.
6. If desired, transfer the mac and cheese to a baking dish and top with breadcrumbs, bacon bits, or chopped herbs.
7. Bake in a preheated oven at 350°F for 15-20 minutes until bubbly and golden on top.
8. Serve the mac and cheese hot as a main dish or side dish. Enjoy!
