Ingredients:

  • - 1 cup rice

  • - 1/4 cup urad dal (black gram lentils)

  • - 1/4 cup chana dal (split chickpeas)

  • - 1/4 tsp fenugreek seeds

  • - Salt to taste

  • - Oil for cooking dosas



For the potato filling:
  • - 2 large potatoes, boiled and mashed

  • - 1 onion, finely chopped

  • - 1 green chili, finely chopped

  • - 1/2 tsp mustard seeds

  • - 1/2 tsp cumin seeds

  • - 1/2 tsp turmeric powder

  • - A pinch of asafoetida

  • - Curry leaves

  • - Salt to taste



Instructions:

1. Soak the rice, urad dal, chana dal, and fenugreek seeds in water for at least 4 hours.


2. Drain the water and grind the soaked ingredients into a smooth batter. Add salt to taste and let the batter ferment overnight.



3. To make the potato filling, heat oil in a pan and add mustard seeds, cumin seeds, and curry leaves.


4. Add chopped onions, green chili, turmeric powder, and asafoetida. Saute until the onions are soft.



5. Add the mashed potatoes and mix well. Cook for a few minutes and adjust the seasoning as needed.


6. Heat a non-stick pan and pour a ladleful of dosa batter onto it. Spread the batter in a circular motion to make a thin dosa.



7. Drizzle some oil around the edges of the dosa and cook until it turns crispy and golden brown.


8. Spread a spoonful of the potato filling on one half of the dosa and fold it over to cover the filling.



9. Serve hot with coconut chutney and sambar.
