Ingredients:

  • - 4 cups of chicken or vegetable broth

  • - 2 cloves of garlic, minced

  • - 1 tablespoon of ginger, grated

  • - 2 tablespoons of soy sauce

  • - 1 tablespoon of mirin or rice vinegar

  • - 1 teaspoon of sesame oil

  • - 1 teaspoon of miso paste

  • - 2 packs of fresh ramen noodles

  • - Toppings of your choice (such as sliced green onions, soft-boiled eggs, sliced mushrooms, nori seaweed, and sliced pork or tofu)



Instructions:

1. In a large pot, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, and sauté until fragrant.


2. Pour in the chicken or vegetable broth and bring to a boil. Reduce the heat to low and let simmer for about 10 minutes to allow the flavors to meld.



3. Stir in the soy sauce, mirin or rice vinegar, and miso paste. Taste the broth and adjust the seasonings as needed.


4. While the broth is simmering, cook the fresh ramen noodles according to the package instructions. Drain and rinse the noodles under cold water to prevent them from sticking together.



5. To assemble the ramen bowls, divide the cooked noodles among serving bowls. Ladle the hot broth over the noodles.


6. Top the ramen with your desired toppings, such as sliced green onions, soft-boiled eggs, sliced mushrooms, nori seaweed, and sliced pork or tofu.



7. Serve the ramen immediately and enjoy while hot.
