Risotto alla Milanese

Risotto alla Milanese is a classic Italian dish that originated in Milan. This creamy and flavorful dish is made with Arborio rice, saffron, Parmesan cheese, and butter. It is a perfect comfort food that is sure to impress your guests.

  • - 1 ½ cups Arborio rice

  • - 4 cups chicken or vegetable broth

  • - 1 small onion, finely chopped

  • - 2 tablespoons butter

  • - 1 tablespoon olive oil

  • - 1 pinch of saffron threads

  • - 1/2 cup dry white wine

  • - 1/2 cup grated Parmesan cheese

  • - Salt and pepper to taste


1. In a small saucepan, heat the chicken or vegetable broth over low heat. Add the saffron threads to the broth and let it steep for about 10 minutes.

2. In a large saucepan, heat the olive oil and 1 tablespoon of butter over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

3. Add the Arborio rice to the saucepan and toast it for about 2 minutes, stirring constantly.

4. Pour in the white wine and stir until it is absorbed by the rice.

5. Begin adding the saffron-infused broth, one ladleful at a time, stirring constantly and allowing each ladleful to be absorbed before adding the next.

6. Continue this process until the rice is creamy and cooked al dente, about 18-20 minutes.

7. Stir in the remaining tablespoon of butter and Parmesan cheese until melted and well combined.

8. Season with salt and pepper to taste.

9. Serve the Risotto alla Milanese hot, garnished with additional Parmesan cheese if desired.
