  • - 2 tomatoes, chopped

  • - 2-3 green chilies, chopped

  • - 1 tsp cumin seeds

  • - 1 tsp coriander powder

  • - 1 tsp turmeric powder

  • - 1 tsp red chili powder

  • - 1 tsp garam masala

  • - 1/2 cup yogurt

  • - 2 tbsp oil

  • - Salt to taste

  • - Fresh coriander leaves, for garnishing

To prepare Rogan Josh, follow these steps:

1. Heat oil in a large, heavy-bottomed pan over medium heat. Add cumin seeds and let them splutter.

2. Add chopped onions and sauté until they turn golden brown.

3. Add minced garlic, grated ginger, and green chilies. Sauté for a few minutes until the raw smell disappears.

4. Add the chopped tomatoes and cook until they become soft and mushy.

5. Add coriander powder, turmeric powder, red chili powder, and salt. Mix well and cook for a few minutes to allow the spices to blend.

6. Add the meat pieces and cook until they are browned on all sides.

7. Add yogurt and mix well to coat the meat with the spices and yogurt.

8. Add enough water to cover the meat and bring it to a boil. Reduce heat, cover, and simmer for about 1-2 hours or until the meat is tender.

9. Once the meat is cooked, add garam masala and simmer for another 5-10 minutes.

10. Garnish with fresh coriander leaves and serve hot with steamed rice or naan bread.
