Ingredients:

For the pastry:

  1. - 2 cups all-purpose flour

  2. - 1/2 cup warm water

  3. - 1/4 cup melted butter

  4. - Pinch of salt

For the filling:
  1. - 1 1/2 cups Topfen (quark or farmer's cheese)

  2. - 1/2 cup sugar

  3. - 2 eggs

  4. - Zest of 1 lemon

  5. - Juice of 1/2 lemon

  6. - 1/4 cup melted butter

  7. - 1/4 cup breadcrumbs

Instructions:

1. Start by preheating your oven to 350°F (180°C) and greasing a baking sheet with butter.

2. To make the pastry, place the flour in a large mixing bowl and make a well in the center. Pour in the warm water, melted butter, and salt. Mix together until a dough forms, then knead the dough on a floured surface until smooth. Cover the dough and let it rest for 30 minutes.

3. While the dough is resting, prepare the filling. In a separate bowl, combine the Topfen, sugar, eggs, lemon zest, and lemon juice. Mix until well combined.

4. Roll out the dough on a floured surface into a thin rectangle. Brush the dough with melted butter and sprinkle breadcrumbs over the top.

5. Spread the cheese filling evenly over the dough, leaving a border around the edges. Roll up the dough tightly, tucking in the ends as you go.

6. Place the strudel on the prepared baking sheet and brush with melted butter.

7. Bake the Topfenstrudel in the preheated oven for 30-35 minutes, or until the pastry is golden brown and the filling is set.

8. Allow the strudel to cool slightly before slicing and serving. Enjoy the Topfenstrudel warm or at room temperature.
