Ingredients:


For the crust:
  1. - 2 1/2 cups all-purpose flour

  2. - 1 teaspoon salt

  3. - 1 cup unsalted butter, cold and cut into small cubes

  4. - 1/2 cup ice water

For the filling:
  1. - 6-8 medium-sized apples, peeled, cored, and thinly sliced

  2. - 1/2 cup granulated sugar

  3. - 1/4 cup brown sugar

  4. - 1 teaspoon ground cinnamon

  5. - 1/4 teaspoon ground nutmeg

  6. - 1/4 teaspoon ground cloves

  7. - 1/4 teaspoon salt

  8. - 2 tablespoons all-purpose flour

  9. - 1 tablespoon lemon juice

Instructions:


1. Preheat your oven to 375°F (190°C).


2. To make the crust, combine the flour and salt in a large mixing bowl. Add the cold butter cubes and use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.



3. Slowly add the ice water, 1 tablespoon at a time, mixing until the dough comes together. Be careful not to overmix. Divide the dough into two equal parts, shape into discs, wrap in plastic wrap, and refrigerate for at least 30 minutes.



4. In a separate bowl, combine the sliced apples, granulated sugar, brown sugar, cinnamon, nutmeg, cloves, salt, flour, and lemon juice. Toss until the apples are evenly coated.



5. Roll out one disc of dough on a lightly floured surface to fit a 9-inch pie dish. Place the dough in the dish and trim any excess overhang.



6. Fill the pie crust with the spiced apple mixture, making sure to evenly distribute the apples.


7. Roll out the second disc of dough and place it over the filling. Trim any excess overhang and crimp the edges to seal the pie.



8. Cut a few slits in the top crust to allow steam to escape during baking.


9. Optional: brush the top crust with an egg wash (1 egg beaten with a tablespoon of water) for a shiny finish.



10. Bake the pie in the preheated oven for 45-50 minutes, or until the crust is golden brown and the filling is bubbling.



11. Allow the pie to cool slightly before serving. Serve warm with a scoop of vanilla ice cream for a delicious dessert.
