Authentic Enchiladas Recipe

Ingredients:

- 2 tablespoons vegetable oil

- 1 onion, finely chopped

Instructions:

1. Preheat the oven to 350°F (175°C). Grease a 9x13-inch baking dish.


2. In a large skillet, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent, approximately 5 minutes. Stir in the minced garlic and cook for an additional minute.


3. Add the ground cumin, chili powder, dried oregano, salt, and black pepper to the skillet. Stir well to combine and cook for 1-2 minutes until fragrant.



4. Pour in the tomato sauce and chicken or vegetable broth. Bring the mixture to a simmer and let it cook for about 10 minutes, allowing the flavors to meld together.


5. In a separate bowl, mix the shredded chicken with a small amount of the sauce, ensuring the chicken is well coated.


6. Warm the corn tortillas by wrapping them in a damp towel and microwaving for 20-30 seconds until pliable. This step prevents them from breaking during rolling.



7. Spoon a generous amount of sauce onto the bottom of the prepared baking dish.


8. Take a tortilla and place a small amount of the chicken mixture and a sprinkle of shredded cheese down the center. Roll the tortilla tightly and place it seam-side down in the baking dish. Repeat this step with the remaining tortillas, arranging them side by side.


9. Pour the remaining sauce over the enchiladas, ensuring they are fully covered. Sprinkle the remaining shredded cheese on top.



10. Cover the baking dish with aluminum foil and bake for 20 minutes. Then, remove the foil and bake for an additional 10-15 minutes until the cheese is melted and bubbly.


11. Once cooked, remove the enchiladas from the oven and let them rest for a few minutes before serving.


12. Serve the enchiladas hot, garnishing with optional toppings such as chopped fresh cilantro, diced tomatoes, sliced avocado, and sour cream.
