To prepare the Banh Cuon, follow these steps:

1. In a large mixing bowl, combine the rice flour, tapioca flour, water, salt, and sugar. Whisk until the mixture is smooth and well combined. Let the batter rest for at least 30 minutes to allow the flavors to meld.


2. In a small skillet, heat the vegetable oil over medium heat. Add the chopped shallots and cook until they are soft and fragrant. Add the ground pork and mushrooms, and cook until the pork is fully cooked. Season with salt and pepper to taste.
