Banh Xeo, also known as Vietnamese sizzling crepes, is a popular street food in Vietnam. This crispy and savory pancake is filled with various ingredients, making it a delicious and satisfying meal. Here is a detailed recipe for making Banh Xeo at home:

Ingredients:
- 1 cup rice flour
- 1/2 cup cornstarch
- 1 1/2 cups coconut milk
- 1 1/2 cups water
- 1/2 tsp turmeric powder
- 1/2 tsp salt
- 1/2 lb pork belly, thinly sliced
- 1/2 lb shrimp, peeled and deveined
- 1 onion, thinly sliced
- 1/2 cup bean sprouts
- Fresh herbs (such as cilantro, mint, and Thai basil)
- Lettuce leaves
- Fish sauce
- Vegetable oil for frying
Instructions:
1. In a large bowl, whisk the rice flour, cornstarch, coconut milk, water, turmeric powder, and salt until smooth. Let the batter rest for at least 30 minutes to allow the flavors to meld together.
2. In a skillet, heat a small amount of vegetable oil over medium-high heat. Add the pork belly and cook until browned and crispy, about 5-7 minutes. Remove the pork belly from the skillet and set aside.
3. In the same skillet, add the shrimp and cook until pink and cooked through about 2-3 minutes. Remove the shrimp from the skillet and set aside.
4. Heat a non-stick skillet over medium heat and add a tablespoon of vegetable oil. Pour in a ladleful of the batter, swirling the pan to coat the bottom evenly. Cook for 2-3 minutes until the edges start to crisp up.
5. Add a few slices of pork belly, shrimp, onion, and bean sprouts to one half of the crepe. Fold the other half over the filling to form a half-moon shape. Cook for another 2-3 minutes until the crepe is crispy and golden brown.
6. Transfer the Banh Xeo to a serving plate and serve with fresh herbs, lettuce leaves, and fish sauce on the side.
7. To eat, tear off a piece of the Banh Xeo, place it on a lettuce leaf, add some fresh herbs, and drizzle with fish sauce. Roll it up and enjoy the delicious flavors and textures of this Vietnamese delicacy.
Banh Xeo is best enjoyed hot off the pan, so make sure to serve it immediately after cooking.
