Ingredients:

  1. - 2 cups of rice flour

  2. - 1 cup of all-purpose flour

  3. - 1 1/2 cups of coconut milk

  4. - 1 cup of sugar

  5. - 1 teaspoon of baking powder

  6. - 1/2 teaspoon of salt

  7. - 3 eggs

  8. - 1/4 cup of melted butter

  9. - 1/2 cup of grated coconut (optional)

  10. - Banana leaves or parchment paper for lining the pan

  11. - Salted egg slices or grated cheese for topping



Instructions:


1. Preheat the oven to 350°F (180°C) and grease a 9-inch round cake pan. Line the bottom and sides of the pan with banana leaves or parchment paper.



2. In a large bowl, combine the rice flour, all-purpose flour, sugar, baking powder, and salt. Mix well to ensure that all the dry ingredients are evenly distributed.



3. In a separate bowl, beat the eggs and add the coconut milk and melted butter. Mix well until all the ingredients are well combined.



4. Gradually add the wet ingredients to the dry ingredients, stirring continuously until a smooth batter is formed. Make sure there are no lumps in the batter.



5. Pour the batter into the prepared cake pan and smooth the top with a spatula. Sprinkle the grated coconut on top of the batter, if desired.



6. Place the salted egg slices or grated cheese on top of the batter, spacing them evenly.


7. Bake the bibingka in the preheated oven for 30-40 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.



8. Remove the bibingka from the oven and let it cool for a few minutes before serving. Slice the bibingka into wedges and enjoy it warm with a cup of hot tea or coffee.



Bibingka is best served fresh and warm, but leftovers can be stored in an airtight container at room temperature for up to 3 days. Reheat the bibingka in the microwave or oven before serving to restore its soft and moist texture.
