Cannoli Recipe
Cannoli is a traditional Italian pastry that consists of a crisp, tube-shaped shell filled with a sweet, creamy filling typically made with ricotta cheese. Originating from Sicily, cannoli is a popular dessert enjoyed worldwide for its rich and indulgent taste. Ingredients:
- 2 cups all-purpose flour
- 1/4 cup sugar
- 1/4 teaspoon salt

- 1 egg yolk

- 1 egg white, lightly beaten
- Vegetable oil, for frying
- 1 1/2 cups ricotta cheese
- 1/2 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 1/4 cup mini chocolate chips
- Powdered sugar, for dusting
Instructions:
1. In a large mixing bowl, combine the flour, sugar, and salt. Cut in the butter using a pastry cutter until the mixture resembles coarse crumbs.
2. In a small bowl, whisk together the egg yolk and Marsala wine. Gradually add the wet ingredients to the dry ingredients, mixing until a dough forms.
3. Turn the dough out onto a floured surface and knead until smooth. Wrap in plastic wrap and refrigerate for at least 30 minutes.
4. In a separate bowl, combine the ricotta cheese, powdered sugar, and vanilla extract. Stir in the mini chocolate chips.
5. Roll out the dough on a floured surface to about 1/8 inch thickness. Cut into rounds using a cookie cutter or glass.
6. Wrap each round of dough around a cannoli tube, brushing the edges with the beaten egg white to seal.
7. In a large pot, heat vegetable oil to 375°F. Carefully place the cannoli tubes in the hot oil and fry until golden brown, about 2-3 minutes. Remove with tongs and drain on paper towels.
8. Once cooled, carefully slide the cannoli shells off the tubes. Fill each shell with the ricotta mixture using a piping bag or spoon.
9. Dust the filled cannoli with powdered sugar before serving.
