Chiles rellenos, a classic Mexican dish, consists of roasted poblano peppers stuffed with a savory filling, battered, and fried to perfection. This dish is a delicious and satisfying option for any meal. Here is a detailed recipe to make chiles rellenos at home:

Ingredients:
- 6 large poblano peppers
- 1 cup of shredded Oaxaca or Monterey Jack cheese
- 1 cup of cooked and shredded chicken or beef (optional)
- 1/2 cup of diced onion
- 2 cloves of garlic, minced
- 1 tablespoon of vegetable oil
- Salt and pepper to taste
- 1 cup of all-purpose flour
- 4 large eggs, separated
- 1 cup of vegetable oil for frying
- 1 cup of tomato salsa or sauce (optional)
Instructions:
1. Preheat the broiler in your oven. Place the poblano peppers on a baking sheet and broil them, turning occasionally, until the skins are charred and blistered. This should take about 10-15 minutes. Remove the peppers from the oven and place them in a plastic bag to steam for 10 minutes. This will make it easier to peel off the skins.
2. While the peppers are steaming, prepare the filling. In a skillet, heat 1 tablespoon of vegetable oil over medium heat. Add the diced onion and minced garlic and sauté until softened, about 5 minutes. Add the shredded chicken or beef, if using, and cook until heated through. Season with salt and pepper to taste. Remove from heat and set aside.
3. Remove the charred skins from the poblano peppers. Make a slit down the side of each pepper and carefully remove the seeds and membranes, being careful not to tear the peppers. Stuff each pepper with a portion of the cheese and the filling mixture.
4. In a shallow dish, whisk the egg whites until stiff peaks form. In another dish, beat the egg yolks until light and frothy. Gently fold the egg yolks into the egg whites.
5. Heat the vegetable oil in a large skillet over medium heat. Dredge each stuffed pepper in flour, then dip it into the egg mixture, making sure to coat it completely. Carefully place the peppers in the hot oil and fry until golden brown on all sides, about 3-4 minutes per side.
6. Remove the fried peppers from the skillet and place them on a paper towel-lined plate to drain excess oil.
7. Serve the chiles rellenos hot with tomato salsa or sauce, if desired. Enjoy the delicious flavors and textures of this traditional Mexican dish!
Chiles rellenos are a labor of love, but the end result is well worth the effort. The crispy exterior, gooey cheese, and flavorful filling make this dish a true delight for the taste buds. Serve it as a main course or as a side dish at your next gathering, and watch as your guests rave about your culinary skills.
