Kimchi is a traditional Korean dish made with fermented vegetables, most commonly cabbage and radishes. It is a staple in Korean cuisine and is loved for its tangy, spicy, and umami flavors. Ingredients:

  1. - 1 medium Napa cabbage

  2. - 1/4 cup kosher salt

  3. - 1 tablespoon sugar

  4. - 1/2 cup Korean red chili pepper flakes (gochugaru)

  5. - 1 tablespoon minced garlic

  6. - 1 teaspoon grated ginger

  7. - 2 tablespoons fish sauce

  8. - 2 tablespoons soy sauce

  9. - 2 green onions, chopped

  10. - 1 small carrot, julienned

  11. - 1/2 daikon radish, julienned



Instructions:


1. Cut the Napa cabbage into quarters lengthwise and remove the core. Cut each quarter into bite-sized pieces and place them in a large bowl. Sprinkle the kosher salt over the cabbage and toss to coat. Let the cabbage sit for about 2 hours, tossing occasionally to ensure even salting.


2. After 2 hours, rinse the cabbage thoroughly under cold water to remove excess salt. Squeeze out any excess water and place the cabbage in a clean bowl.



Mix together the sugar, Korean red chili pepper flakes, minced garlic, grated ginger, fish sauce, and soy sauce in a separate bowl to make the kimchi paste.


4. Add the green onions, julienned carrot, and daikon radish to the cabbage. Pour the kimchi paste over the vegetables and toss everything together until well combined.



5. Pack the kimchi into a clean glass jar, pressing down firmly to remove any air pockets. Leave some space at the top of the jar as the kimchi will expand during fermentation.


6. Seal the jar with a lid and let it sit at room temperature for 1-2 days to ferment. Check the kimchi daily and press down on the vegetables to release any trapped air bubbles.



Transfer the jar to the refrigerator after 1-2 days to halt the fermentation process. The taste of your kimchi will improve with time and remain delicious for several weeks.


8. Serve the kimchi as a side dish or use it in recipes like kimchi fried rice, kimchi stew, or kimchi pancakes. Enjoy the tangy, spicy, and umami flavors of your homemade kimchi!
