Ingredients:

  1. - 1 lb boneless, skinless chicken breast or tofu, cut into bite-sized pieces

  2. - 2 tablespoons green curry paste

  3. - 1 can (14 oz) coconut milk

  4. - 1 cup chicken or vegetable broth

  5. - 1 tablespoon fish sauce

  6. - 1 tablespoon sugar

  7. - 1 cup bamboo shoots, drained

  8. - 1 cup green beans, trimmed and cut into 1-inch pieces

  9. - 1 red bell pepper, thinly sliced

  10. - 1 cup Thai basil leaves

  11. - 1 lime, juiced

  12. - Salt, to taste

  13. - Vegetable oil



Instructions:


1. Heat a large skillet or wok over medium heat and add a tablespoon of vegetable oil. Add the green curry paste and cook, stirring constantly, for about 1 minute until fragrant.



2. Add the chicken or tofu to the skillet and cook until browned on all sides, about 5-7 minutes.


3. Pour in the coconut milk and chicken or vegetable broth, stirring to combine. Bring the mixture to a simmer and let it cook for 10 minutes, stirring occasionally.



4. Add the fish sauce and sugar to the curry, stirring well to combine. Taste the curry and adjust the seasoning with salt if necessary.



5. Add the bamboo shoots, green beans, and red bell pepper to the curry, stirring to incorporate. Let the curry simmer for an additional 5-7 minutes, until the vegetables are tender.



6. Remove the skillet from heat and stir in the Thai basil leaves and lime juice. Taste the curry again and adjust the seasoning if needed.



7. Serve the green curry hot over steamed jasmine rice or noodles, garnished with additional Thai basil leaves and lime wedges.
