Ingredients:
- 1 lb boneless, skinless chicken breast or tofu, cut into bite-sized pieces
- 2 tablespoons green curry paste

- 1 tablespoon fish sauce
- 1 tablespoon sugar
- 1 cup bamboo shoots, drained
- 1 cup green beans, trimmed and cut into 1-inch pieces
- 1 red bell pepper, thinly sliced
- 1 cup Thai basil leaves
- 1 lime, juiced
- Salt, to taste
- Vegetable oil
Instructions:
1. Heat a large skillet or wok over medium heat and add a tablespoon of vegetable oil. Add the green curry paste and cook, stirring constantly, for about 1 minute until fragrant.
2. Add the chicken or tofu to the skillet and cook until browned on all sides, about 5-7 minutes.
