Ingredients:


  1. - 2 large eggplants

  2. - 1 lb ground beef or lamb

  3. - 1 onion, diced

  4. - 3 cloves of garlic, minced

  5. - 1 can of diced tomatoes

  6. - 1 tsp dried oregano

  7. - 1 tsp dried basil

  8. - 1/2 tsp cinnamon

  9. - Salt and pepper, to taste

  10. - 1/4 cup olive oil

  11. - 1/4 cup butter

  12. - 1/4 cup all-purpose flour

  13. - 2 cups milk

  14. - 1/2 cup grated Parmesan cheese

  15. - 1/4 cup breadcrumbs



Instructions:


1. Preheat your oven to 375°F (190°C).


2. Slice the eggplants into 1/4-inch-thick rounds. Place them on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast in the oven for 20-25 minutes, or until tender and slightly browned.



3. In a large skillet, heat some olive oil over medium heat. Add the diced onion and minced garlic, and sauté until fragrant.


4. Add the ground meat to the skillet and cook until browned. Drain any excess fat.



5. Stir in the diced tomatoes, oregano, basil, cinnamon, salt, and pepper. Let the mixture simmer for about 10 minutes, until the flavors have melded together.



6. In a separate saucepan, melt the butter over medium heat. Whisk in the flour to create a roux. Slowly pour in the milk while whisking constantly to avoid lumps. Cook the béchamel sauce until it thickens, then stir in the Parmesan cheese until melted.



7. To assemble the moussaka, layer the roasted eggplant slices on the bottom of a baking dish. Top with the ground meat mixture, then pour the béchamel sauce over the top.



8. Sprinkle breadcrumbs over the béchamel sauce to create a crispy topping.


9. Bake the moussaka in the preheated oven for 45-50 minutes, or until the top is golden brown and bubbly.



10. Allow the moussaka to cool for a few minutes before serving. This dish pairs well with a Greek salad and some crusty bread.
