  1. - 2 lbs of boneless, skinless chicken breasts or pork shoulder, cut into 1-inch cubes

  3. - 1/4 cup lemon juice

  4. - 4 cloves of garlic, minced

  5. - 1 tsp dried oregano

  6. - Salt and pepper to taste

  7. - Wooden skewers, soaked in water for at least 30 minutes

  8. - Pita bread, for serving

  9. - Chopped tomatoes, cucumbers, red onions, and lettuce, for serving

  10. - Tzatziki sauce, for serving


1. In a large bowl, combine the olive oil, lemon juice, garlic, oregano, salt, and pepper. Add the chicken or pork cubes to the marinade and toss to coat. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 1 hour, or overnight for best results.

2. Preheat a grill or grill pan over medium-high heat. Thread the marinated meat onto the soaked skewers, leaving a little space between each piece to ensure even cooking.

3. Grill the skewers for 10-12 minutes, turning occasionally, until the meat is cooked through and has nice grill marks. The internal temperature of the meat should reach 165°F for chicken or 145°F for pork.

4. While the meat is cooking, warm the pita bread on the grill for a minute on each side.

5. Serve the souvlaki hot off the grill with the warm pita bread, chopped vegetables, and tzatziki sauce on the side. To assemble, place a few pieces of meat on a pita bread, top with vegetables, and drizzle with tzatziki sauce.

6. Enjoy your homemade souvlaki with a side of Greek salad, roasted potatoes, or rice pilaf for a complete meal.
