Ingredients:


  1. - 1 package of phyllo pastry sheets

  2. - 1 pound of fresh spinach, chopped

  3. - 1 onion, finely chopped

  4. - 2 cloves of garlic, minced

  5. - 1 cup of crumbled feta cheese

  6. - 1/4 cup of chopped fresh dill

  7. - 1/4 cup of chopped fresh parsley

  8. - 1/4 cup of olive oil

  9. - Salt and pepper to taste



Instructions:


1. Preheat your oven to 375°F (190°C).


2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic and sauté until soft and translucent, about 5 minutes.



3. Add the chopped spinach to the skillet and cook until wilted, about 3-4 minutes. Remove from heat and let cool slightly.


4. In a large mixing bowl, a combine the cooked spinach mixture, crumbled feta cheese, chopped dill, chopped parsley, salt, and pepper. Mix well to combine all the ingredients.



5. Take a sheet of phyllo pastry and brush it lightly with olive oil. Place another sheet on top and brush with olive oil again. Repeat this process until you have a stack of 5-6 phyllo sheets.



6. Spoon the spinach and feta mixture onto one end of the phyllo stack, leaving a border around the edges. Roll the phyllo stack into a log, tucking in the edges as you go.



7. Place the rolled spanakopita onto a baking sheet lined with parchment paper. Brush the top with olive oil.


8. Bake in the preheated oven for 25-30 minutes, or until the phyllo is golden brown and crispy.



9. Remove from the oven and let cool slightly before slicing into individual portions.


10. Serve the spanakopita warm or at room temperature and enjoy the delicious flavors of this traditional Greek dish.
