Ingredients:


  1. - 8 oz of rice noodles

  2. - 1/4 cup of vegetable oil

  3. - 1/2 lb of shrimp, chicken, or tofu (optional)

  4. - 3 cloves of garlic, minced

  5. - 1 shallot, finely chopped

  6. - 2 eggs, beaten

  7. - 1/4 cup of roasted peanuts, crushed

  8. - 1 cup of bean sprouts

  9. - 1 red bell pepper, thinly sliced

  10. - 2 green onions, chopped

  11. - 1/4 cup of chopped cilantro



For the sauce:
  1. - 3 tbsp of fish sauce

  2. - 2 tbsp of tamarind paste

  3. - 2 tbsp of palm sugar

  4. - 1 tbsp of soy sauce

  5. - 1 tbsp of rice vinegar

  6. - 1/2 tsp of red pepper flakes



Instructions:


1. Soak the rice noodles in hot water for about 10-15 minutes, or until they are soft but still slightly firm. Drain and set aside.


2. In a small bowl, mix together all of the sauce ingredients and set aside.



3. Heat the vegetable oil in a large wok or skillet over medium-high heat. Add the garlic and shallot and sauté until fragrant, about 1-2 minutes.



4. Add the protein of your choice (shrimp, chicken, or tofu) to the wok and cook until fully cooked through. Push the protein to one side of the wok.



5. Add the beaten eggs to the other side of the wok and scramble until cooked through. Mix the eggs with the protein.



6. Add the soaked rice noodles to the wok and pour the sauce over the noodles. Use tongs to toss everything together until the noodles are well coated with the sauce.



7. Add the roasted peanuts, bean sprouts, red bell pepper, and green onions to the wok and continue to toss everything together until the vegetables are slightly cooked but still crisp.



8. Taste and adjust the seasoning as needed, adding more fish sauce, tamarind paste, or palm sugar to your liking.



9. Remove the wok from heat and garnish with chopped cilantro and additional crushed peanuts.


10. Serve the Pad Thai hot, garnished with lime wedges on the side for squeezing over the dish.
