Pozole is a traditional Mexican dish that is hearty, flavorful, and perfect for any occasion. This rich and savory soup is made with hominy, meat, and a variety of spices that come together to create a delicious and satisfying meal. Follow this detailed recipe to make your own pozole at home.

Ingredients:
- 2 pounds of pork shoulder, cut into bite-sized pieces
- 2 cans of hominy, drained and rinsed
- 1 onion, chopped
- 4 cloves of garlic, minced
- 2 dried guajillo chilies, stemmed and seeded
- 2 dried ancho chilies, stemmed and seeded
- 1 tablespoon of dried oregano
- 1 teaspoon of cumin
- Salt and pepper to taste
- 6 cups of chicken broth
- Toppings: shredded cabbage, sliced radishes, chopped cilantro, lime wedges, and diced avocado
Instructions:
1. In a large pot, heat some oil over medium-high heat. Add the pork shoulder pieces and brown them on all sides, about 5-7 minutes.
2. Add the chopped onion and minced garlic to the pot and cook until the onion is translucent, about 5 minutes.
3. While the onion and garlic are cooking, toast the dried chilies in a dry skillet over medium heat until they become fragrant, about 2-3 minutes. Then, transfer the chilies to a bowl and cover them with hot water. Let them soak for about 15 minutes.
4. Once the chilies are softened, transfer them to a blender along with the oregano, cumin, salt, pepper, and a cup of chicken broth. Blend until smooth.
5. Strain the chili mixture into the pot with the pork, onion, and garlic. Add the rest of the chicken broth and bring the mixture to a boil. Reduce the heat to low, cover the pot, and simmer for about 1 1/2 to 2 hours, or until the pork is tender.
6. Add the hominy to the pot and continue to simmer for another 30 minutes, allowing the flavors to meld together.
7. Taste the pozole and adjust the seasoning as needed with more salt and pepper.
8. Serve the pozole hot, garnished with shredded cabbage, sliced radishes, chopped cilantro, lime wedges, and diced avocado.
