Ingredients:


  1. - 1 lb of pork belly, thinly sliced

  2. - 1 onion, thinly sliced

  3. - 1 head of garlic, peeled and minced

  4. - Salt and pepper

  5. - Sesame oil

  6. - Soybean paste (doenjang)

  7. - Red chili paste (gochujang)

  8. - Lettuce leaves

  9. - Ssamjang (a mixture of doenjang and gochujang)

  10. - Kimchi

  11. - Pickled radish

  12. - Garlic cloves

  13. - Scallions

  14. - Sliced jalapenos

  15. - Steamed rice


Instructions:

1. Start by marinating the thinly sliced pork belly with salt, pepper, minced garlic, and a drizzle of sesame oil. Let the pork belly marinate for at least 30 minutes to allow the flavors to penetrate the meat.


2. Prepare a grill or a grill pan on medium-high heat. Once the grill is hot, place the marinated pork belly slices on the grill and cook until they are browned and crispy on both sides, about 2-3 minutes per side.


3. While the pork belly is grilling, prepare the side dishes. Slice the onion thinly and grill it on the same grill pan until it is caramelized and softened. Arrange the lettuce leaves, ssamjang, kimchi, pickled radish, garlic cloves, scallions, sliced jalapenos, and steamed rice on a serving platter.


4. Once the pork belly is cooked, remove it from the grill and slice it into bite-sized pieces. Serve the grilled pork belly with the side dishes and condiments, allowing guests to create their own wraps by placing a piece of pork belly in a lettuce leaf, adding some ssamjang, kimchi, pickled radish, and any other desired toppings.
