  6. - 1 jalapeño pepper, seeded and finely diced

  7. - 1/2 cup of chopped fresh cilantro

  8. - 2 tomatoes, seeded and diced

  9. - Salt and pepper to taste

  10. - 1 avocado, diced (optional)

  11. - Tortilla chips or plantain chips for serving



Instructions:


1. Start by bringing a large pot of water to a boil. Add the shrimp and cook for 2-3 minutes, or until they turn pink and opaque. Be careful not to overcook the shrimp, as they will become tough and rubbery. Once cooked, remove the shrimp from the pot and place them in a bowl of ice water to stop the cooking process.



2. Once the shrimp have cooled, drain them and chop them into bite-sized pieces. Place the chopped shrimp in a large bowl and add the lime juice and lemon juice. Make sure the shrimp are completely covered in the citrus juice. This will help "cook" the shrimp and give them a bright and tangy flavor.



3. Add the diced red onion, bell pepper, jalapeño pepper, cilantro, and tomatoes to the bowl with the shrimp. Season with salt and pepper to taste. Mix everything together gently to ensure that all the ingredients are well combined.



4. Cover the bowl with plastic wrap and refrigerate the ceviche for at least 30 minutes to allow the flavors to meld together. The longer you let the ceviche sit, the more flavorful it will become.



5. Just before serving, gently fold in the diced avocado, if using. The avocado adds a creamy texture and richness to the ceviche.



6. Serve the shrimp ceviche in a bowl or on a platter, garnished with additional cilantro leaves. Serve with tortilla chips or plantain chips on the side for scooping up the ceviche.
