Sundubu-jjigae is a popular Korean stew made with soft tofu, vegetables, and often some type of protein such as seafood or pork. This dish is known for its spicy and savory flavors, making it a comforting and satisfying meal. Here is a detailed recipe for making Sundubu-jjigae at home:

Ingredients:

  1. - 1 package of soft tofu (sundubu)

  2. - 1/2 onion, sliced

  3. - 1/2 zucchini, sliced

  4. - 1/2 carrot, sliced

  5. - 4-6 shiitake mushrooms, sliced

  6. - 1/2 cup of kimchi, chopped

  7. - 1/2 pound of protein (such as shrimp, clams, or pork), optional

  8. - 2 cloves of garlic, minced

  9. - 1 tablespoon of gochugaru (Korean red pepper flakes)

  10. - 1 tablespoon of gochujang (Korean red pepper paste)

  11. - 2 cups of anchovy or seafood broth

  12. - 1 teaspoon of soy sauce

  13. - 1 teaspoon of sesame oil

  14. - Salt and pepper to taste

  15. - Optional toppings: sliced green onions, sesame seeds, and a cracked egg


Instructions:

1. Start by preparing your ingredients. Slice the onion, zucchini, carrot, shiitake mushrooms, and protein of your choice. Chop the kimchi and mince the garlic.


2. In a large pot or a Korean earthenware pot (dolsot), heat some oil over medium heat. Add the sliced onion and garlic, and sauté until fragrant.


3. Add the protein (if using) and cook until browned. If using seafood, make sure it is cooked through.


4. Add the sliced zucchini, carrot, and shiitake mushrooms to the pot. Stir and cook for a few minutes until slightly softened.


5. Add the chopped kimchi, gochugaru, and gochujang to the pot. Stir well to combine and cook for another minute.


6. Pour in the anchovy or seafood broth and bring the mixture to a simmer. Let it cook for about 10 minutes to allow the flavors to meld together.


7. Carefully add the soft tofu to the pot, gently breaking it up into large chunks. Be careful not to break the tofu too much, as you want it to remain soft and silky.


8. Season the stew with soy sauce, sesame oil, salt, and pepper to taste. Adjust the seasoning as needed.


9. If desired, crack an egg into the center of the pot and let it cook until the white is set but the yolk is still runny.


10. Serve the Sundubu-jjigae hot, garnished with sliced green onions and sesame seeds. Enjoy this comforting and spicy Korean stew with a bowl of steamed rice.
