Ingredients:

- 6 slices of top round beef (about 1/4 inch thick)

- 1/2 cup Dijon mustard

- 6 slices of bacon

- 1 large onion, thinly sliced

- 2 dill pickles, sliced into thin strips

- Salt and pepper to taste

- 2 tablespoons vegetable oil

- 2 cups beef broth

- 1 cup red wine

- 2 tablespoons flour

- 2 tablespoons butter



Instructions:

1. Preheat your oven to 350°F (180°C).


2. Lay out the beef slices on a flat surface and spread a thin layer of Dijon mustard over each slice.



3. Place a slice of bacon, a few slices of onion, and a few strips of pickle on top of each beef slice. Season with salt and pepper.


4. Roll up each beef slice tightly and secure with toothpicks.



5. Heat the vegetable oil in a large Dutch oven over medium-high heat. Brown the beef rouladen on all sides, about 3-4 minutes per side.


6. Remove the beef rouladen from the Dutch oven and set aside.



7. In the same Dutch oven, add the beef broth and red wine. Bring to a simmer, scraping up any browned bits from the bottom of the pot.


8. Return the beef rouladen to the pot and cover with a lid. Transfer to the preheated oven and cook for 1.5-2 hours, or until the beef is tender.



9. Remove the beef rouladen from the pot and transfer to a serving platter. Remove the toothpicks and cover with foil to keep warm.


10. In a small saucepan, melt the butter over medium heat. Whisk in the flour to create a roux. Cook for 1-2 minutes, until the flour is lightly browned.



11. Gradually whisk in the cooking liquid from the Dutch oven, stirring constantly until the gravy thickens.


12. Season the gravy with salt and pepper to taste.



13. Serve the beef rouladen with the gravy spooned over the top. Enjoy with mashed potatoes and steamed vegetables for a complete meal.
