To make Coxinha, you will need the following ingredients:


  1. - 2 cups of shredded cooked chicken

  2. - 1 onion, finely chopped

  3. - 2 cloves of garlic, minced

  4. - 2 tablespoons of olive oil

  5. - 1 cup of chicken broth

  6. - 1 cup of milk

  7. - 2 cups of all-purpose flour

  8. - 2 tablespoons of butter

  9. - Salt and pepper to taste

  10. - 2 eggs, beaten

  11. - 2 cups of breadcrumbs

  12. - Vegetable oil for frying


Instructions:


1. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic and sauté until translucent.


2. Add the shredded chicken to the skillet and season with salt and pepper. Cook for a few minutes until the chicken is heated through.


3. In a separate saucepan, combine the chicken broth, milk, and butter. Bring to a simmer over medium heat.


4. Slowly add the flour to the liquid mixture, stirring constantly to avoid lumps. Continue stirring until the dough comes together and forms a ball.


5. Remove the dough from the heat and let it cool slightly. Once cool enough to handle, knead the dough until smooth.


6. Take a small portion of the dough and flatten it in the palm of your hand. Place a spoonful of the chicken filling in the center and fold the dough over the filling, shaping it into a teardrop.


7. Dip each Coxinha into the beaten eggs, then coat with breadcrumbs, ensuring they are evenly coated.


8. Heat the vegetable oil in a deep fryer or a large skillet. Fry the Coxinha in batches until golden brown and crispy, about 4-5 minutes per batch.


9. Remove the Coxinha from the oil and drain on paper towels to remove excess oil.


10. Serve the Coxinha hot and enjoy this delicious Brazilian snack with your favorite dipping sauce.


Coxinha is best served fresh and hot, but they can also be reheated in the oven for a few minutes to maintain their crispiness. This recipe yields approximately 20 Coxinhas, but feel free to double or triple the recipe for larger gatherings. Enjoy this savory and flavorful Brazilian snack with friends and family!
