  1. - 1 lb of white fish fillets (such as cod or halibut), cut into chunks

  2. - 1 lb of large shrimp, peeled and deveined

  3. - 1 onion, thinly sliced

  4. - 3 cloves of garlic, minced

  5. - 1 red bell pepper, thinly sliced

  6. - 1 green bell pepper, thinly sliced

  7. - 1 can of diced tomatoes

  8. - 1 can of coconut milk

  9. - 1/4 cup of chopped cilantro

  10. - 1/4 cup of chopped parsley

  11. - 2 tablespoons of olive oil

  12. - 1 tablespoon of paprika

  13. - 1 tablespoon of cumin

  14. - 1 tablespoon of coriander

  15. - Salt and pepper to taste

  16. - Lime wedges, for serving


Instructions:


1. In a large pot or Dutch oven, heat the olive oil over medium heat. Add the sliced onion and cook until softened, about 5 minutes.


2. Add the minced garlic, sliced bell peppers, paprika, cumin, and coriander to the pot. Cook for another 5 minutes, stirring occasionally.


3. Add the diced tomatoes (with their juices) to the pot and bring to a simmer. Let the mixture cook for about 10 minutes, until the tomatoes have broken down and the flavors have melded together.


4. Pour in the coconut milk and stir to combine. Bring the mixture back to a simmer.


5. Add the fish chunks and shrimp to the pot, making sure they are submerged in the liquid. Season with salt and pepper to taste.


6. Cover the pot and let the Moqueca simmer for about 10 minutes, or until the seafood is cooked through and the flavors have developed.


7. Stir in the chopped cilantro and parsley, reserving some for garnish.


8. Serve the Moqueca hot, garnished with the remaining herbs and lime wedges on the side. Enjoy with a side of steamed rice or crusty bread.
