  4. - 1 lb smoked sausage, sliced

  5. - 1 lb bacon, chopped

  6. - 1 onion, chopped

  7. - 4 cloves of garlic, minced

  8. - 2 bay leaves

  9. - 1 tsp cumin

  10. - 1 tsp paprika

  11. - Salt and pepper to taste

  12. - Water

  13. - Rice, orange slices, and collard greens for serving


Instructions:


1. Start by soaking the black beans in water overnight. Drain and rinse the beans before using.


2. In a large pot, add the pork shoulder, beef brisket, smoked sausage, and bacon. Cook over medium heat until the meats are browned.


3. Add the chopped onion and minced garlic to the pot and sauté until fragrant.


4. Stir in the soaked black beans, bay leaves, cumin, paprika, salt, and pepper. Add enough water to cover the ingredients.


5. Bring the mixture to a boil, then reduce the heat to low and simmer for about 2-3 hours, or until the beans and meats are tender.


6. Throughout the cooking process, be sure to skim off any foam or excess fat that rises to the surface.


7. Once the Feijoada is cooked, remove the bay leaves and adjust the seasoning to taste.


8. Serve the Feijoada hot with rice, orange slices, and sautéed collard greens on the side.
