Kartoffelsuppe (Potato Soup)

Kartoffelsuppe, or German potato soup, is a hearty and comforting dish that is perfect for a cold winter day. This recipe serves 4-6 people.

Ingredients:

- 1 tablespoon olive oil

- 1 medium onion, chopped

- 2 cloves garlic, minced

- 4 medium potatoes, peeled and diced

- 4 cups chicken or vegetable broth

- 1 teaspoon salt

- 1/2 teaspoon black pepper

- 1/2 teaspoon dried thyme

- 1 bay leaf

- 1 cup cream or milk

- Chopped fresh parsley, for garnish



Instructions:

1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic and sauté until softened, about 5 minutes.


2. Add the diced potatoes to the pot and pour in the broth. Bring the mixture to a boil, then reduce the heat to low and let simmer for about 15-20 minutes, or until the potatoes are tender.



3. Remove the pot from the heat and use an immersion blender to blend the soup until smooth. Alternatively, you can transfer the soup in batches to a blender and blend until smooth, then return to the pot.


4. Stir in the salt, pepper, thyme, and bay leaf. Let the soup simmer for another 5-10 minutes to allow the flavors to meld together.



5. Remove the bay leaf from the pot and stir in the cream or milk. Adjust the seasoning to taste.


6. Ladle the soup into bowls and garnish with chopped fresh parsley before serving.
