Ingredients:



For the Meringue:


- 10 large egg whites, at room temperature

- 1 cup granulated sugar

- 10 large egg yolks


- 1 can (14 ounces) sweetened condensed milk

Instructions:



1. Preheat your oven to 325°F (165°C). Grease a baking sheet with cooking spray or butter. Set aside.



2. Start by making the meringue. In a large mixing bowl, beat the egg whites on medium speed until frothy. Add the cream of tartar and continue beating until soft peaks form.



3. Gradually add the granulated sugar, about 2 tablespoons at a time, while beating continuously. Beat until stiff peaks form and the meringue is glossy. This process may take around 8-10 minutes.



4. Gently fold in the vanilla extract into the meringue using a rubber spatula until well incorporated.



5. Transfer the meringue onto the prepared baking sheet. Spread it evenly using an offset spatula, forming a rectangular shape that measures around 12x16 inches.



6. Bake the meringue in the preheated oven for about 20-25 minutes or until it turns golden brown. Once done, remove it from the oven and let it cool completely.



7. While the meringue is cooling, prepare the custard filling. In a saucepan, whisk together the egg yolks, sweetened condensed milk, and vanilla extract until well combined.



8. Place the saucepan over low heat and continue whisking the mixture constantly for about 10-15 minutes or until it thickens into a custard consistency. Be careful not to overcook or let it boil to avoid curdling.



9. Remove the custard filling from the heat and let it cool completely.



10. Once both the meringue and custard filling are completely cooled, carefully transfer the meringue onto a clean surface lined with parchment paper.



11. Spread the custard filling evenly over the meringue, leaving about an inch from the edges.



12. Using the parchment paper to help you, tightly roll the meringue from one end to the other, forming a log shape. Make sure to apply gentle pressure while rolling to keep the filling intact.



13. Transfer the rolled Brazo de Mercedes onto a serving platter. Dust the top with powdered sugar, ensuring an even coating.



14. Refrigerate the Brazo de Mercedes for at least 2 hours or overnight to set and chill.
